Christmas Recipe: Cranberry Pineapple Salad

The Weekend Housewife - Countdown to Christmas - Cranberry Pineapple Salad

While this recipe may not look all that pretty, I will say this… it’s the only way that you will get me to eat cranberries that aren’t baked into a cookie of some sort. I don’t make it often but I love to make it for my Annual Cookie Exchange. It has a great flavor and crunch from the walnuts, combined with the whole cranberries and pineapple just makes it awesome. If you make it, please let me know! You can always put a whipped cream on the top but I tend to eat mine plain.

Ingredients:
2 (3-ounce) packages raspberry Jello
1/2 envelope unflavored gelatin
1 cup boiling water
1/2 cup cold water
1 (8-ounce) can crushed pineapple in its own juice
1 (15-ounce) can whole cranberry sauce
1/4 cup finely chopped walnuts

Instructions:
Pour the raspberry Jello and unflavored gelatin into a bowl and add the boiling water. Stir until it’s completely dissolved and then add the cold water. Add the pineapple (with the juice), cranberry sauce and walnuts. Typically, I just leave it in the bowl because I chop it up to serve it but you could also pour it into a Jello mold. It would look prettier if you did and maybe the next time I make it, I will do that. It all tastes the same no matter what. 🙂
